Research/Extension Interests

My research interests focus on understanding the fundamental biochemical mechanisms that govern the transformation of muscle into meat. This includes skeletal muscle growth and efficiency, postmortem energy metabolism, and the development of meat quality attributes. A particular emphasis is placed on calpain activation and function, and how these processes influence beef tenderness.
